Bliss balls are so easy to make and are a healthy choice when you find yourself reaching for a sweet snack.
Try out this lemon coconut recipe;
• 3/4 cup raw cashews
• 1 cup desiccated coconut
• 9 pitted dates
• zest of one lemon
• juice of half a lemon
• 1/2 teaspoon natural vanilla extract
• pinch of salt
• 1 tablespoon rice malt or maple syrup
• extra desiccated coconut for rolling in
Place all ingredients into a food processor and blend until mixture resembles a sticky crumb. If mixture is too dry, you can had a little melted coconut oil.
Shape the mixture into balls. Roll balls in the extra coconut and place in the fridge to set. Enjoy!
